Selmi renews the artisan chocolate sector by offering an exclusive solution: the creation of frozen fruit wrapped in two perfectly balanced layers of chocolate.
The configuration designed to cover frozen fruit in chocolate combines two covering belts such as the R400T Plus or R600T combined with two tempering machines such as the Top EX or Cento EX models.
The system is completed by a special kit, which includes a tray for collecting chocolate and a mesh height adjuster, fitted to the belt.
The chocolate enrobing belt and the blower are always controlled via a special LCD panel. The enrobing zone is equipped with a mechanical mesh vibration to uniform the enrobing and allows the optimisation of the enrobing base of the product.
This solution also allows for extraordinary results with a uniform and flawless outer chocolate enrobing.
The distinctive feature of this solution is the possibility of combining two different types of chocolate, creating surprising harmonies of flavours and contrasts. For example, you can start the enrobing process with a delicate layer of white chocolate and then complete it with a strong, rich dark chocolate coating, creating a unique and irresistible product.
This line configuration is completed by the chocolate enrobing and cooling TUNNEL, essential for the final step in the production process.
After enrobing, the products pass through the cooling tunnel, ensuring uniform crystallisation.
In addition, the covered frozen fruit will be crunchy, thanks to the optimally tempered chocolate layer, ready for packaging and further consumption.
