Frullo 25 by Selmi is a multifunctional machine designed to meet the needs of high-end pastry making and professional kitchens, where precision, versatility, and final product quality are essential.
It is ideal for producing pastry creams, ganaches, caramels, jams, fruit juices, marmalades, nut brittles, soft nougats, bases for artisanal gelato production, and many other preparations.
Frullo 25 allows processing of up to 20 liters per cycle, automating the entire production process. Thanks to the powerful cutter motor, the machine can also handle particularly tough products such as caramels, transforming them into extremely fine powders suitable for multiple creative applications.
The double-jacket liquid heating and cooling system, designed to ensure bain-marie cooking without direct contact with the heat source, guarantees precise and uniform temperature control, improving product quality. The integrated refrigeration unit also allows the mixture to be cooled directly in the tank, making extraction easier and preserving its organoleptic properties.
The tilting tank, adjustable up to 90°, offers maximum flexibility during processing, unloading, cleaning and sanitizing operations, minimizing waste. The mixer with wall-scraper prevents crystallization and burning on the sides, maintaining consistent production efficiency.
Equipped with an automatic washing system to simplify sanification operations, and with simple, intuitive software for recipe management, enabling fully automatic cycles. The air pumping system also allows vacuum cooking, further expanding the range of applications.
The inspection window with integrated lighting allows continuous monitoring of the product without interrupting the process, ensuring total control and consistent results.
